These simple wild garlic scones are super quick and easy to make, packed with flavour and perfect served with cheese or alongside a bowl of soup for lunch or a light supper.

If you have been around this blog for any time you will know I just love making scones and have loads of different recipes for them from chocolate scones to basic simple scones and pumpkin scones too to name but a few. The other thing I love is foraging for wild food and wild garlic is always at the top of my list.

Spring is in the air and the heady scent of wild garlic is in the woods, so make the most of it as I have with my other recipes like wild garlic soup, wild garlic pesto and the others you’ll find listed at the bottom of this post.

What is wild garlic?

Wild garlic or ramsoms are a plant native to us in the UK and of course part of the garlic and onion family. You can read lots of information about wild garlic on the Wild Food UK website.

The season for wild garlic is quite short really, from the end of March till early May depending on where you are.

What does wild garlic taste like?

Wild garlic/ramsoms have a delicate garlic flavour. Softer than traditional garlic and without the sharpness you often taste in garlic.

Foraging for wild garlic

Don’t pick plants that are beside a road due to traffic pollution. When you are picking wild garlic don’t strip whole plants. Take leaves or flowers from here and there so that plants can carry on growing.

How long does wild garlic last? Once you’ve brought your leaves and flowers home you can keep them in a bag in the salad drawer of the fridge for up to 4 days.

You can use all parts of the wild garlic plant. From the flowers and stems to leaves, the bulb itself and the seeds too.

Ingredients for wild garlic scones

Wild garlic – you’ll just need the leaves here and you can either use them freshly picked or if you have some already frozen in your freezer just defrost and you’re good to go.

Butter – As usual I use unsalted butter and it has to be well chilled for scone making

Flour – I’m using self raising flour plus a little baking powder

Milk – or you can use buttermilk or a mix of plain yogurt and milk

How to make wild garlic scones

Making these savoury garlic scones just couldn’t be easier.

Simply chop up your wild garlic leaves as finely as possible so they mix really well with your scone batter. I wouldnt use a food processor here as this will just turn the leaves to mush. use a knive and chop up small.

Now rub the butter into the flour, baking powder and a dash of salt to get a nice breadcrumb like mixtire.

Add the chopped up wild garlic leaves and the milk and bring together into a a well mixed dough.

Roll out your scone dough and using a 6.5cm cutter cut out your wild garlic scones. You could always make one big round shape from your dough and cut out wedge shaped scones if you prefer.

Brush your garlic scones with a little milk and bake for about 15 minutes or until golden.

Allow your wild garlic scones to cool a little before serving.

How long do wild garlic scones keep?

Your scones are always best on the day they are baked but will keep in an airtight box for 2-3 days. Just warm them up in the oven before serving them.

How to serve wild garlic scones

These savoury garlic scones are just perfect served warm and slathered with butter alongside a bowl of soup (especially my wild garlic soup for a real spring time treat).

They are also perfect either with cream cheese or any of your favourite cheeses or cold meats and as part of a sharing platter or cheese board instead of the usual bread or crackers.

Ingredients
 

  • 50 g wild garlic leaves finely chopped
  • 50 g unsalted butter chilled and chopped
  • 225 g self-raising flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 150 ml milk

Instructions
 

  • Preheat oven to 180C
  • Mix the butter with flour, salt and baking powder to form a crumb like mix
  • Add the milk and chopped wild garlic and form a dough
  • Roll out about 2cm deep and cut out scones either with a round cutter/glass or cut into triangles, whichever you prefer
  • Brush with a little milk and bake for approximately 15 minutes or until golden

Notes

Your wild garlic scones are always best on the day you make them but will keep in an airtight box for a few days. Just warm in the oven before serving.
They will freeze well for up to 4 months.
