These sweet pickled peppers are super quick and easy to make and perfect for serving with BBQ, roasts, in sandwiches, on pizza and also with a cheeseboard or sharing platter.

Ingredients for Sweet pickled peppers
Bell peppers – Sometimes called ‘Sweet Peppers’ – I have used a mix of red, yellow and green peppers here. Add in some orange peppers too if you have them.
Garlic – you want this to add just a dash of extra flavour to your pickled peppers.
Vinegar – Use white vinegar or cider vinegar here so as not to overwhelm the delicate flavour of the peppers.
Salt – you always want some salt in your pickling and you can add extra spices here if you want more flavour in your pickled peppers.

How to make pickled peppers
Pickling sweet bell peppers is super easy and quick too. The most time-consuming part of the process is prepping the peppers ready for pickling.
Simply cut all the peppers into slices about 0.5cm wide going the length of the peppers so you get nice long pepper slices.

Pack the sweet peppers into a nice big jar, I used a 500ml jar and used all three peppers for one jar of pickled peppers.
You want to alternate the pepper slices in the jar so you see all the colours and not just a batch of red then one yellow, take your time and carefully place them.
Slice the garlic and add it to the jar alongside the pepper slices.
Boil the vinegar and water with the salt and any extra spices you want to add and pour this into the jar with the mixed peppers making sure they are all covered in the pickling liquid.
Place the jar in a water bath and ‘can’ for 15 minutes.
Set the pickled sweet peppers aside for about 2 weeks to let those sweet and tangy flavours to fully develop.
Your canned pickled peppers will keep for up to a year. once opened store in the fridge and use within a month.

How to serve pickled peppers
These pickled peppers are perfect served with burgers and other BBQ goodies. Serve them in wraps and sandwiches or add to salads.
You can also serve these pickled peppers as part of a sharing platter or with a cheeseboard.

Pickled Sweet Peppers
Ingredients
- 3 bell peppers aka sweet peppers in assorted colours
- 2 cloves garlic
- 125 ml white wine vinegar or cider vinegar
- 125 ml water
- 1 tsp salt
Instructions
- Slice the peppers lengthwise into strips about 0.5cm wide and slice up the garllic cloves
- Pack the pepper slices into the jar showing alternate colours on the outside of the jar and push in the garlic slices
- Mix water and vinegar with the salt and bring to the boil then pour over the peppers to cover them
- Water bath can the pickled peppers for 15 minutes
- Leave the pickled peppers rot about 2 weeks for the sweet tangy flavours to develop
