It’s cherry season and I love using these beauties in as many ways as possible, so these cherry tarts is just another idea for making the most of these fabulous fruits.

Ingredients for cherry puff tarts
Cherries – of course these are the star of the show and they are at their best at this time of year. Make sure your cherries are ripe and not bruised or squishy.
Puff pastry – use all-butter puff pastry if you want the best quality puff pasty tarts but if thets not available just your basic puff pastry will do fine.
Almonds – I use both ground almonds and flaked almonds in this recipe.
Sugar – You just need some icing sugar, no others involved.
Flavourings – I have used almond extract to boost that lovely almond flavour and vanilla as well. The other dash of flavour is from the Amaretto (an almond-flavoured liqueur) that I have soaked the cherries in. This is optional but does add a dash of extra flavour to your cherries.

How to make cherry puff tarts
These cherry tarts are super easy to make but first you have to prepare the cherries. You want to stone the cherries first (remove the pits or whatever you want to call them) and I use an old French garlic/olive press for this task. You can also pop the cherry into the mouth of a bottle and push the stone out using a drinking straw or just cut them in half and pop the stone out with your fingers.
Chop the cherries into small pieces and let them soak for half an hour or so in a small bowl along with icing sugar and a dash or Amaretto if you fancy.


Unroll the puff pastry and cut out circles using a cookie cutter. I used a 10cm cookie cutter here and got 10 tarts out of my sheet of puff pastry.
Mix the tart filling of ground almonds, cream cheese, icing sugar and the almond and vanilla extract and spoon this onto the centre of the pastry circles. You want to leave a 1cm border all round the tarts.
Add a large tablesoon of your cherries on top of the creamy filling and then go around the edges of your cherry puff tarts with beaten egg.
Sprinkle on the flaked almonds round the edges and add a sprinkling of icing sugar before popping them into a preheated oven for about 15 minutes.

Let your cherry tarts cool on a wire tray and finally sprinkle with a little more icing sugar when you are ready to serve.
How to serve cherry tarts
These puff pastry tarts are perfect served with a cup of coffee in the morning, either for an indulgent breakfast or as that all-important mid-morning snack to keep you going. They are equally good in the afternoon with a nice cup of tea.
You can also serve these cherry tarts as a dessert alongside a scoop of your favourite vanilla ice cream or a dollop of whipped cream or creme fraiche.

How long do cherry tarts keep?
Your cherry puff tarts will keep for a few days in an airtight box. They are always best on the day you make them and since they are so easy to make that’s the best way to use them really.
If you are keeping them then just lightly warm them for a few minutes to crisp them up again for serving.

Cherry Puff Tarts
Ingredients
- 250 g cherries
- 1 tsp icing sugar
- 1 tbsp Amaretto
- 320 g puff pastry
- 2 tbsp icing sugar
- 150 g cream cheese
- 1 tsp almond extract
- 1 tsp vanilla extract
- 4 tbsp ground almonds
- 1 egg beaten
- 3 tbsp flaked almonds
Instructions
- Preheat oven to 200C and line a baking tray
- Remove stones from cherries and chop and place in bowl with icing sugar and Amaretto for 15 mins
- Mix cream cheese with almond and vanilla extract and icing sugar
- Cut out rounds with 10cm cookie cutter
- Place about a tablespoon of creamy filling in centre of each circle leaving about a 1cm border and top with a tablespoon of the cherries
- Brush the border with egg and top with the flaked almonds and sprinkle with icing sugar
- Bake for approximately 15 minutes till golden
