I love using vegetables instead of the usual carbohydrates like rice, pasta and couscous. Here I’m serving these simple lamb chops with broccoli rice which is super healthy and tastes amazing too, oh, and by the way it’s so easy to make, so that ticks all the boxes really.
Ingredients
This lamb chops with broccoli rice recipe is for two people but you can just double things up for more servings. You will need 2 lamb chops. If they are very small then serve 2 chops per person.
For the broccoli rice
You are going to need a head of broccoli, two cloves of garlic, dried oregano, thyme and rosemary, some parmesan and salt and pepper.
Herb butter
I also make a herb butter for this recipe, just a simple mix of unsalted butter, lemon juice, garlic, rosemary, mint and some salt and pepper. You can make a batch of this and store it wrapped in the freezer to use at any time.
Or you could use my homemade pesto butter for this recipe too.
How to make this
Now we are talking fast food here. Your broccoli rice is simply made by whizzing the broccoli in a food processor till it’s crumb-like.
Then you will mix this with garlic and herbs and some olive oil and just saute for a couple of minutes till heated through.
Meanwhile, grill the lamb chops for about 2 minutes each side or however you like them.
If you are making the herb butter just whizz up the ingredients in a mini food processor.
Alternatives
You can use any herbs you like for the herb butter and for adding into the broccoli rice.
If you don’t have broccoli you can make cauliflower rice instead. Just follow the same recipe.
Serving ideas
I like to serve my lamb chops with broccoli rice with some carrot batons and mange tout. A nice springtime supper, hearty, filling, healthy and oh so tasty too.

Lamb chops with broccoli rice
Ingredients
- 2 lamb chops
Herb butter
- 2 tbsp butter
- 1 tsp basil plus rosemary and mint finely chopped
- 1/2 lemon zest of half lemon plus 1 tsp juice
- 1 clove garlic minced
- salt and pepper
Broccoli rice
- 1 head broccoli
- 1 clove garlic minced
- 1 tbsp dried rosemary plus oregano and thyme
- 1 tbsp parmesan grated
- salt and pepper
Instructions
Herb butter
- Make the herb butter by whizzing all the ingredients together in a mini processor then scoop out and make a round patty
Broccoli rice
- Chop the broccoli into florettes and blitz in food processor till it forms bread crumb like pieces
- Mix the broccoli rice with the garlic, herbs, seasoning and parmesan and saute in a teaspoon of olive oil till tender, about 5 minutes
- Grill the chops about 2 minutes on each side
- Serve the chops with the herb butter on top and the broccoli rice on the side. Add carrot batons, peas or mange tout.
