Make the herb butter by whizzing all the ingredients together in a mini processor then scoop out and make a round patty
Broccoli rice
Chop the broccoli into florettes and blitz in food processor till it forms bread crumb like pieces
Mix the broccoli rice with the garlic, herbs, seasoning and parmesan and saute in a teaspoon of olive oil till tender, about 5 minutes
Grill the chops about 2 minutes on each side
Serve the chops with the herb butter on top and the broccoli rice on the side. Add carrot batons, peas or mange tout.
Notes
use any mix of herbs that you like for the herb butter or follow my recipe for pesto butter and use this instead.You can also make cauliflower rice instead of the broccoli rice, use same method as above
