Succulent juicy chicken wrapped in smokey bacon. This is the British version of the classic hunter’s chicken dish. Whether you go Italian, Spanish or French this chicken dish is comfort food at its best.
If you are looking for an easy recipe then this is the one for you. There are very few ingredients, little skill required and not a lot of time spent slaving in the kitchen.
Hunter’s chicken is a basic baked chicken recipe that is popular all over the place. In Italy it is Chicken Cacciatore and in Spain/South of France it is Basque Chicken. All boil down to a super simple tasty chicken dish, comfort food all the way!
Make sure you use the freshest ingredients for the best results. Let’s face it, some chicken breast fillets are better than others. While I have used breast fillets you could use deboned chicken thighs which have a wonderful flavour and are much cheaper.
Ingredients for hunter’s chicken
I’ve used 2 chicken fillets, 2 rashers of smoked bacon, 3 carrots, 1 sweet potato and 2 handfuls of kale.
Other bits and pieces are a teaspoonful of butter to jazz up the mash, a tablespoon of flaked almonds, a pinch of nutmeg and coriander, a teaspoon of flour for the gravy and a little water plus salt and pepper to taste.
How to make this
Wrap the chicken fillets in the bacon and place on a small oven dish and bake for approximately 30 minutes at 190C/375F.
While that is cooking you can be making the carrot and sweet potato mash by peeling and chopping both of the veggies and boiling in salted water until tender. Drain and mash well adding the butter, seasoning and a pinch of grated nutmeg and ground coriander.
The kale can be steamed in a matter of a few minutes over a pan of boiling water.
You can scatter on the almond flakes as they are but I like to toast mine in a dry pan for 1-2 minutes till aromatic and golden. Watch them like a hawk as they catch and burn really easily. Finish off the kale with a little of the nutmeg too.
To make the gravy simply remove the chicken from dish and keep warm while you heat the juices on the hob and stir in the flour a little at a time and add some water to make a nice gravy.
How many does this serve
This recipe is for two people but you can easily just double it up to make more depending on how many folks you are feeding.
So there you have it, hunter’s chicken with kale and sweet potato. It’s like a mini roast chicken dinner that you can whip up any day of the week.

I’m always looking for easy recipes. Just don’t have the energy for slaving hours in the kitchen after slaving at work. I’m going to try this, only wish my gravy looked as delicious as yours.
