I’ve already shared my recipe for a pear tarte tatin and it is so popular I thought I had better add another version, so here we have this store cupboard plum tarte tatin that I’m sure will approve to be just as popular.

Ingredients for this plum tarte tatin
There are very few ingredients in this simple plum tart recipe, in fact you very probably have them all in your larder already.
Plums – I’ve used standard red plums here, you can opt for any plums you happen to come across.
Pastry – Keep things simple and just use a packet of ready rolled puff pastry.
Spices – good old Chinese Five Spice powder will give you a nice kick of star anise, ginger, cinnamon, cloves, fennel and black pepper.
Butter – I always use unsalted butter then I can add a pinch of salt myself to my recipes and know I’m in charge of the salt content.
Maple syrup – this gives a lovely deep flavour to your plum tarte tatin.

How to make plum tarte tatin
I told you this was an easy recipe and it really is.
The first step is to take your 22cm tart tin and place it on the hob with the butter, Five-Spice powder, and maple syrup. Give it a stir to mix everything together as the butter melts.
Half the plums and remove the stones/pits, whatever you want to call them.


Carefully remove the baking tin from the hob and lay the plums cut side facing upwards starting with a circle on the outside and working your way inwards.
Unroll the pastry and lay it on top of the plums tucking the edges into the tart tin.


Pop your plum pie into a preheated oven and bake for about 20 minutes till golden on top.
Allow it to cool in the tin and then place a plate on top and carefully flip the tip and plate over so that the tarte lands on the plate with the pastry side on the bottom and the cooked plums on top.
Don’t worry if the plums haven’t held their shape too well after being in the oven, they taste amazing nestled on their pastry base with that sweet and spicy syrup.

How to serve plum tarte tatin
Simply serve this upside-down plum tart with vanilla ice cream as I have here, or a dollop of crème fraîche, or with double cream poured over.

Your plum tarte tatin with serve 8 people. Any leftovers can be stored in an airtight box for a few days and reheated before serving.

Plum Tarte Tatin
Equipment
- 1 22cm tart tin
Ingredients
- 400 g plums about 7 plums
- puff pastry ready rolled
- 2 tbsp butter
- 2 tbsp maple syrup
- 1 tsp Chinese 5 spice blend
Instructions
- preheat oven to 200C
- Put the baking tin on the hob on a low heat and add the butter, maple syrup and spice powder and stir as butter melts to mix everything together
- Half the plums and remove the stones/pits
- Remove the tin from the hob and place the plum in circles inside the tin with the cut side facing upwards
- Unroll the puff pastry and lay it over the plums tucking in the edges all around.
- Bake for about 20 minutes till golden on top
- Remove from oven and allow to cool before placing a plate on top and turning the whole thing over so that the tart ends up on the plate with plums on top.
