Smoothies are great at any time of year but a summer smoothie is just the thing on a warm summer’s morning when you want breakfast to be healthy and maybe sipped whilst sitting outside enjoying the weather. That of course is a bit of a dream if you happen to live in Scotland.
Summer is all about berries and this summer smoothie is just packed with them. Strawberries, redcurrants, blackcurrants and even blueberries. Actually use any berries you like whatever you happen to have on hand.
I’ve also added in chia seeds, flax seeds, coconut flakes, vanilla extract, nut butter and plain yogurt and coconut milk. Sounds like a lot of ingredients, but when you get into making smoothies they are things you’ll have hanging around anyway.
This recipe if for one smoothie, if making more just double up and add on.
So start your day the smooth way with this summer smoothie.
- 1 cup plain yogurt
- 1/2 cup almond milk
- 1/4 cup strawberries chopped
- 1/4 cup redcurrants
- 1/4 cup blackcurrants
- 1/4 cup blueberries
- 1 tsp chia seeds
- 1 tsp flax seeds
- 1 tsp nut butter
- 1/2 tsp vanilla extract
- coconut flakes to serve
- Whazz all ingredients in blender and pour into a glass and top with coconut flakes
