Fig And Prosciutto Pizza Bianca With Blue Cheese And Walnuts

Figs are one of the true pleasures of autumn for me, I scoop them up whenever I see them reduced in the stores. This fig, prosciutto pizza bianca with blue cheese is a great way of using this delightful bounty in a lovely savoury way.

Don’t you just love bringing together all your favourite things into one recipe? Then sitting down and almost wallowing in the damn good taste of it all.

For me that’s what cooking (and baking of course) is all about. Enjoyment! And this pizza is all that and more…

Figs are the star of the show on this pizza. Their juicy sweetness almost carmelizes in the oven giving this pizza bianca a depth of flavour that is amazing.

Add the salty savoury prosciutto and that rich creamy blue cheese. Don’t forget the aromatic rosemary and almost sweet red onion. Finally those toasted walnuts for crunch.

Quite seriously this fig and prosciutto pizza knocks your average pizza into a cocked hat.

What is pizza bianca

Not all pizzas are created equal. There are so many different types of pizza. From the most basic original pizza with it’s simple tomato sauce with cheese and basil to some truly whacky pizza combinations.

And of course the much-maligned and contested ham and pineapple pizza. ‘Yuck’ I say to that one, but alas it’s Idgy’s favourite from when she was a little girl so found it’s way onto our table rather a lot over the years.

People tend to think that all pizza has tomato sauce as it’s base. Not so. Pizza bianca. Which translates as ‘white pizza’ has no tomatoes hanging about on it at all.

Instead, pizza bianca is topped with a drizzle of olive oil, salt and pepper and anything at all as long as it isn’t tomato sauce.

Homemade pizza dough

This is a really basic pizza dough and will make enough for two 30cm pizzas. If I only want one pizza I make up this dough, half it and pop it in the freezer for another day.

The pizza dough is just plain flour, a packet of fast action yeast, salt, sugar and olive oil with water.

I don’t leave the dough to rest, it rises in the oven.  So even making this fig prosciutto and blue cheese pizza bianca from scratch takes less than half an hour.

Alternatively, just use store-bought pizza dough if you like.

Ingredients for this fig and prosciutto pizza

  • Pizza dough
  • figs
  • prosciutto (parma ham or any other dry cure ham you have on hand)
  • fresh rosemary
  • blue cheese (I used Dolcelata picante but just choose your favourite)
  • red onions
  • garlic
  • walnuts
  • olive oil
  • salt and pepper

How to make fig and prosciutto pizza

Roll out your pizza dough till it is about 2mm thick. I like a nice thin crispy crust. Make it thicker if you want.

Sprinkle over the blue cheese and prosciutto first. Now add the rings of red onion, snippings of rosemary and sliced figs and crushed garlic.

Finally, crumble over the walnuts and drizzle over some olive oil and your seasoning.

Now pop that prosciutto pizza in a hot oven for barely 12 minutes.

How to serve fig and prosciutto pizza

Have this simple prosciutto pizza bianca for lunch or supper. Serve it with a delicious glass of red wine and imagine you are in Italy.

Feel the sunshine on your face and imagine the sounds that would be around you. The chatter of Italian voices, birds singing. Maybe waves lapping at the seashore.

Come on, in the situation we are in nowadays imagination is all we have for travelling.

How many will this pizza serve?

I’ve made this fig and prosciutto pizza for two people. Now that is just my normal servings. I like just a couple of slices of pizza.

I’m well aware that many folks think nothing of wolfing down a massive bin lid sized pizza and would think that this wasn’t even enough for one person.

Moderation is the name of the game!

Ingredients
 

pizza dough base

  • 300 g plain flour
  • 1 tsp yeast fast-acting yeast
  • 1 pinch salt
  • 1 tbsp olive oil

pizza topping

  • 1 small red onion sliced into rings
  • 2-3 figs sliced 2-3mm wide
  • 4 slices prosciutto
  • 1 clove garlic minced
  • 1 sprig rosemary finely chopped
  • 4 tbsp dolcelatte or other blue cheese crumbled
  • 2 tbsp walnuts chopped
  • salt and pepper to taste
  • 1 tsp olive oil to drizzle over finished pizza

Instructions
 

  • preheat oven to 200C

  • Make the pizza dough by bringing together the flour, yeast and salt and the olive oil and enough tepid water to make a workable dough
  • roll out to approx 2mm thick on a piece of baking paper

  • top the rolled out dough with all the other ingredients
  • season with salt and pepper and drizzle over a little olive oil
  • bake for approx 12-15 minutes till the pizza crust is golden and cheese bubbling
