Ingredients for these Christmas truffles

Just imagine the tastes of Christmas and you’ll already know what’s in these amazing little sweet treats.

Almonds – I have used ground almonds bought in a bag. You can buy whole almonds and whizz them up in your food processor if you like.

Spices – Christmas is all about spices and here I’m using classic cinnamon and ginger to flavour these Christmas bonbons.

Sugar – icing sugar (or powdered sugar in USA) is what you need to add sweetness to your truffles.

Butter – I always use unsalted butter in my recipes and then add a pinch of salt. Choose whatever butter you have to hand.

Booze – It just wouldn’t be Christmas without some hooch and I am using brandy here though I have made these Christmas pudding snowballs and used rum instead and it works just as well.

Orange – just the zest for that zingy fruity hit of freshness.

Coconut – for the snow on your snowball truffles. Just basic desiccated coconut.

How to make Christmas pudding truffles

These little Christmas pudding snowball truffles couldn’t be easier to make. In fact, I have made these on stage at the Country Living Magazine Christmas Fair many times and they always go down a storm.

Make sure your butter is at room temperature or it won’t blend perfectly with the other ingredients. Don’t melt the butter though, just make sure it is not straight from the fridge.

You don’t want to use the flesh of the orange so enjoy eating that. You just want the zest to flavour your Christmas truffles. If it is an unwaxed orange go right ahead and grate off the zest.

If it is not unwaxed then simply wash the orange in hot soapy water and scrub with nail brush then rinse thoroughly and pat dry, now grate off the zest and you’re good to go.

Put all the ingredients, apart from the desiccated coconut into a food processor and let it whirl till everything is perfectly combined in one smooth mixture with no spots of butter showing.

Scoop the truffle mixture out of the food processor and with wet hands roll it into little balls about the size of a large marble. I got 50 Christmas snowball truffles from this recipe.

This is a messy job and a good one to get the kids involved with!

Now tip the desiccated coconut onto a flat plate and roll the truffles in the coconut so it sticks all over.

Set the finished Christmas pudding truffles aside in the fridge for 1 – 2 hours to firm up.

Your Christmas pudding truffles will keep in an airtight box for up to two weeks. Make these just before Christmas and they will be the perfect little foodie gift for family and friends.
