Christmas Pudding Snowball Truffles

Full of festive flavours these little Christmas pudding snowball truffles are super easy to make with no cooking at all!

Ingredients
 

  • 125 g ground almonds
  • 125 g icing sugar powdered sugar
  • 30 g butter room temperature
  • 2 tbsp brandy or rum
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1 orange zest only

To finish off

  • 3 tbsp desiccated coconut

Instructions
 

  • Place all the ingredients (apart from the desiccated coconut) into a food processor and whizz till it is a smoothly blended mixture
  • Take out of the processor and with wet hands roll the dough into balls about the size of a large marble (I got 50)
  • place the coconut on a flat plate and roll the truffles in the coconut till well covered.
  • Pop the truffles in the fridge for 1-2 hours to firm up
