Looking for a light yet tasty dessert that’s sugar-free and actually good for you too? Well, this delicious Sugar-Free Strawberry Chia Parfait is the one for you then.

Sugar Free Strawberry Chia Parfait

Summertime on a plate, or rather in a glass here. Instead of reaching for the ice cream when the temperature rises, try this healthy dessert instead. I promise you it packs a punch in the flavour department.

This is the perfect dessert for those looking for a healthy sugar-free alternative to the usual sweet summertime puddings.

The chia seeds are packed with protein and with the goodness of strawberries, almond milk, yogurt and almonds you really do have something heavenly and healthy too.

A no cooking recipe!

There is no cooking involved with this little recipe, it is simply a matter of putting things together and allowing time to bring together flavours and make things happen.

Now that’s the sort of ‘cooking’ I like to do on a warm summer day, as little as possible and certainly no slaving over a hot Aga. This is a little recipe for 1 person, just double it up or whatever for more.

Is this strawberry chia parfait healthy?

Yes, yes yes! Chia seeds are packed with protein, add the goodness and vitamins in the strawberries, the almond milk and Greek yogurt too. And there is no sugar in this recipe.

If you haven’t used chia seeds before you will be amazed how they expand and go from tiny dry seeds into an almost tapioca-like dessert.

When to serve this parfait

You can have this sugar-free strawberry chia parfait as a dessert after your meal or if you are feeling really decadent have it for breakfast.

Ingredients
 

  • 3 strawberries sliced
  • 2 basil leaves minced
  • 1/2 tsp balsamic vinegar
  • 2 tbsp chia seeds
  • 1/2 cup almond milk
  • 1/4 tsp vanilla extract
  • 1 tsp plain yogurt
  • 1 tbsp flaked almonds toasted

Instructions
 

  • Mix the sliced strawberries with the basil and the balsamic vinegar in a small bowl and set aside for 1 hour to marinate (not in the fridge)
  • Stir the chi seeds into the almond milk with the vanila extract in the glass or jar you are going to serve this in and set aside for 1 hour
  • Top the chi seed mixture with the strawberry mixture and top with the yogurt and toasted almonds flakes

low carb, sugar-free and low in calories too, this is one strawberry dessert that is healthy too!
