Leek And Parmesan Party Nibbles with spiced vinegar dip

Make the most of seasonal produce with these melt in the mouth leek and parmesan party nibbles. The creaminess of the leeks pairs perfectly with the crunch of that parmesan coating. Oh, and the spicy vinegar dip is just amazing.

I love party food, maybe it’s the whole mini food part of it that appeals but show me a platter of mixed homemade party nibbles and I’m there like a shot.

So much so that I actually wrote a book, A Wee Taste Of Scotland. All about how to make your own Scottish inspired party food. Boy, was that one fun to write!

This is another quick and easy recipe

It’s something a wee bit different from the normal party nibbles!

These leek and parmesan bites have just a few ingredients, mostly stuff from the store cupboard and fridge.

Leeks (white part only – save the green parts for soup making as they are full of flavour) I love using leeks in different ways and have used them before in my Leek and Mussel Party Tartlets.

Egg – this is to act as the glue that holds the parmesan crumb mixture to the leeks

Grated parmesan cheese and breadcrumbs with some salt and pepper too.

Notes

You can use panko breadcrumbs if you have them. however, just whizzing up a slice of bread in your food processor with give you super breadcrumbs to use in this recipe. They freeze well so make a batch and keep them in the freezer for all sorts of cooking.

For the spiced vinegar dip

White wine vinegar – you could use apple cider vinegar, champagne vinegar or red wine vinegar here instead. just don’t use malt vinegar as it’s far too strong for this dip.

Honey just to sweeten things up a bit

Soy sauce for added flavour, and a fresh chilli to really give this vinegar dip a real hot kick.

Chopped fresh coriander for its marvellous flavour and a nice touch of green.

How to make these party nibbles

Cut the leeks into 3mm/1/4″ rings and then dip these into the beaten egg. This is a bit messy folks, so for goodness sake don’t answer your phone or you’ll have egg and breadcrumbs everywhere!

Now dip them into the mixture of breadcrumbs and grated parmesan cheese.

Fry these beauties for just 1 minute on each side and set aside on kitchen paper to drain.

Make the vinegar dip

Simply mix all the ingredients together and add a pinch of salt and a tablespoon of water.

That’s it. Super simple, super tasty and oh so easy!

Serving suggestions

Serve these leek and parmesan bites warm for the best taste. Or at room temperature. They should not be served straight from the fridge.

You could also serve them with a plain old fashioned tomato sauce or a salsa.

Ingredients
 

  • 1 leek
  • 1 egg beaten
  • 3 tbsp breadcrumbs
  • 2 tbsp grated parmesan cheese
  • salt and pepper to taste

For the spicy vinegar dip

  • 3 tbsp white wine vinegar
  • 1/2 tsp honey
  • 1 tbsp water
  • 3 tbsp soy sauce
  • 1/2 tsp chopped fresh chilli
  • 1 tbsp fresh coriander chopped
  • pinch of salt
Metric – US Customary

Instructions
 

  • Cut the leek into discs 3mm/1/4 wide
  • Dip leek into the beaten egg then dip into mixture of the breadcrumbs and grated parmesan
  • Heat 2 tbsp oil in a pan and fry the leeks for about 1 minute on each side till golden

Making the spicy vinegar dip

  • Mix all ingredients in a small bowl

Notes

Serve the leek and parmesan party nibbles warm or at room temperature.
