I thought I’d share this Greek-inspired recipe for courgette fritters with tomato dipping sauce. It is a fun and tasty way of using courgettes and makes a great starter if you have people round.
They are perfect for a solo lunch and are as good served cold as part of a picnic should the weather be right. Courgette fritters are the perfect way to get young children to eat courgettes. Just leave out the chilli for kids.
Ingredients for courgette fritters
- Courgettes (zucchini)
- eggs
- ground almonds
- parsley
- mint
- garlic
- onion
- chilli
- salt and pepper
How to make courgette fritters
The first thing you want to do is to grate your courgettes, salt them and leave in a colander to drain for 30 minutes and then squish to release as much water as possible. Use the wide side of the grater for this.
You don’t want anything too fine here. If you don’t do this your courgette fritters will just be a sloppy mess with too much water in them and never come together properly.
It is then just a case of mixing together the courgette fritter ingredients and then making up the little burger style patties and frying them in olive oil till browned and cooked through.
To get them into shape I place a cookie cutter in the frying pan with the oil and spoon some of my courgette batter into the cookie-cutter, leave it for about 30 seconds then gently lift off the cookie cutter, the courgette fritters will then retain their nice round shape.
Of course, you can omit this stage and just go for a rustic look instead of round patties as I have.
Are these courgette fritters healthy?
Yes, yes yes! These vegetarian fritters are super tasty and a healthy low carb and gluten-free option with the ground almonds instead of the usual bread crumbs and no flour in the recipe.
Make sure you cook them well to get that nice crunchy exterior and the soft chewy interior to the fritters.
Tomato Dipping Sauce
It’s all about the fresh juice tomatoes here. Try to get vine-ripened tomatoes as they do have more flavour than the standard tomato types in the shops.
To get even more tomato flavour I have roasted mine in the oven for a few minutes then once cooled removed the skins. Roasting tomatoes brings out their sweetness and they have much more depth of flavour too.
There is also garlic, chilli (omit for younger children), dried oregano, salt and pepper and olive oil in this simple tomato sauce.
Once the tomatoes are roasted and skinned it is just a matter of whizzing everything together in a mini food processor.
How to serve courgette fritters
Serve these as I have done here with my spicy tomato dipping sauce. These are perfect party fodder as they are. Or serve them alongside a Greek salad and tzatziki for a super tasty light and filling Greek meal.
These courgette fritters are equally good served cold next day as part of a packed lunch or a picnic.

Can you freeze courgette fritters?
Once cooked you can freeze these fritters between pieces of baking parchment (so they don’t get welded together in the freezer) and then popped into a freezer-proof box or bag for up to 3 months. Just defrost completely and reheat the fritters.

Ingredients
- 2 courgettes
- 2 eggs
- 1 onion finely chopped
- 1 tbsp fresh parsley chopped
- 1 tbsp fresh mint chopped
- 1/4 tsp fresh chilli chopped
- 1 clove garlic minced
- 4 tbsp ground almonds
- salt & pepper to taste
- 1 tbsp Olive oil for frying
Tomato dipping sauce
- 3 tomatoes roasted in the oven at 200C for 5 mins then skins removed
- 1/2 tsp fresh chilli minced
- 1 clove garlic minced
- 1/2 tsp dried oregano
- salt & pepper to taste
- 1 tsp olive oil to loosen
Instructions
- Courgette Fritters
- Grate the courgettes into a collander and add some salt, set aside for 30 minutes then squeeze out as much water as possible
- Mix courgettes with all other ingredients in a bowl
- Heat oil in a pan and use a cookie cutter to get round shape for fritters by holding in place for 30 seconds as you spoon 1 large tablespoon of batter then removing the cutter, they should end up about 1cm thick, you should get about 10 fritters
- Fry for approx 5 mins each side till golden brown and cooked through
Tomato dipping sauce
- Place all sauce ingredients in a food processor and blitze till smooth.
