Quick and easy pork and broccoli Stir fry

A super easy, healthy and tasty pork and broccoli stir fry recipe that is perfect for any night of the week

Ingredients
 

  • 1 large pork steak
  • 1 tbsp coconut oil
  • 1 cup broccoli florettes
  • 1 cup sugar snap peas
  • 1/2 cup kale chopped
  • 2 baby leeks cleaned and chopped
  • 1 tbsp fresh parsley chopped
  • 1 tsp sesame seeds

Marinade

  • 1 mandarin juice and zest
  • 1 tbsp soy sauce
  • 1/2 tsp chilli chopped
  • 1/2 tsp ginger minced
  • 1 clove garlic minced

Instructions
 

  • Remove any fat from pork and flatten a little with rolling pin the slice into strips
  • Make the marinade by mixing all of those ingredients in a jam jar and shaking well
  • Pour marinade over pork strips, cover and set aside in fridge for 1 hour
  • Heat coconut oil in a wok till hot and stir fry the pork for 2 minutes
  • Add all veggies and marinade and cook for a further 2-3 minutes
  • Serve sprinkled with sesame seeds

Notes

Use any green veggies that you have available, courgette/zucchini, spring onions, spinach etc.
