Quick And Easy Pea and Lentil Soup

Pea and lentil soup is super healthy and so quick and easy to make too.

Ingredients
 

  • 1 small onion diced
  • 1 clove garlic minced
  • 1 stick celery chopped
  • 1 small bunch parsley chopped
  • 500 g peas frozen
  • 1/2 cup lentils
  • salt and pepper to taste
  • 600 ml vegetable stock or water

Instructions
 

  • Saute the onion and celery in a deep pan for 3 mins then add the garlic for 2 mins
  • Add the peas and lentils plus the parsley and seasoning
  • Add enough water or stock to cover veggies
  • Simmer for about 20 minutes till everything is tender
  • Blitz with a hand held blender and add more water if you wish
  • Serve with pea shoots on top

Notes

pea shoots are perfect to decorate this soup if you have some
Soup will keep for up to 4 days in the fridge and freezes well too
