Quick and Easy low-calorie Pea and lettuce soup

Quick and easy this pea and lettuce soup is packed with flavour and super healthy too and low in calories

Ingredients
 

  • 1 tbsp olive oil
  • 1 onion small onion chopped
  • 1 clove garlic minced
  • 500 g frozen peas or fresh peas
  • 1 lt vegetable stock
  • 1/2 iceberg lettuce
  • salt and pepper

Instructions
 

  • heat the oil in a large pan and saute the onion for 3 minutes then ad the garlic for further 2 minutes
  • Add the peas and chopped lettuce along with the stock, cover and simmer for approximately 20 minutes
  • Use a stick blender to blitz the soup till creamy. Or for a ore rustic style simply mash down with a potato masher
  • season with salt and pepper to taste

Notes

Serve this pea and lettuce soup with a sprinkling of chopped mint and a swirl of plain yogurt or cream.
This soup will freeze well for 6 months.
