Honey Roasted Courgettes/Zucchini With Feta

This honey-roasted courgettes/zucchini with feta recipe makes a great starter or side dish and is perfect for vegetarians

Ingredients
 

  • 250 g courgettes thinly sliced
  • 1 clove garlic fine slices
  • 1 tbsp olive oil
  • 100 g feta crumbled
  • 1 tbsp honey runny honey
  • Ground black pepper

Instructions
 

  • Preheat oven to 220C
  • Toss the courgette slices in oil with the garlic and spread out on a baking tray in a single layer
  • Add the honey, feta and pepper and remaining oil
  • Bake 20-25 mins till golden
  • Serves 2 as a meze starter

Notes

Low carb packed with flavour this is a great dish for those on the Mediterranean diet
