Homemade pesto butter

A simple pesto flavoured butter perfect for steaks, roasting chicken or veggies or in a baked potato

Ingredients
 

  • 1 tbsp pine nuts
  • 125 g unsalted butter
  • 3 tbsp basil
  • 1 tbsp parmesan cheese grated
  • 1 clove garlic minced
  • 1 tsp lemon juice
  • salt and pepper to taste

Instructions
 

  • Toast the pine nuts n a dry pan for about 1 minute till just golden and aromatic, remove from pan and cool
  • Whizz everything in food processor
  • Chill and roll out using a mini cookie cutter to cut out shapes or roll in baking paper and label before storing in freezer
