Sicilian Fish in tomato sauce

Equipment

  • oven dish
  • small frying pan

Ingredients
 

  • 1 small monk fish or other firm white fish fillet
  • 1 tbsp olive oil
  • juice and zest half lemon
  • 1 clove garlic minced
  • 3 fresh tomatoes chopped
  • 2 tbsp stoned olives
  • 1 anchovy fillet
  • 1 tsp dried oregano
  • 1 tsp balsamic vinegar
  • seasoning to taste

Instructions
 

  • heat oil in a frying pan and saute fish for approximately 2 minutes each side
  • Remove fish from pan and place in oven proof dish with lemon juice in preheated oven (180C) for 5 minutes
  • In frying pan saute the garlic, tomatoes and all other ingredients for approx 5 minutes
  • Add the cooked tomato mixture to the fish and bake in oven for a further 10 minutes
  • Serve with mixed greens like spinach, rocket or pea shoots

Notes

use any firm white fish that you like here.
You can use gentleman's relish instead of anchovy fillets.
Serve this on a bed of salad greens or serve alongside pasta of your choice or with couscous.
