Scottish Party Salad Spoons

Deliciously light and creamy these salad spoons are the Scottish version of a classic Russian salad

Ingredients
 

  • 1 large carrot peeled and diced
  • 100 g turnip peeled and diced
  • 1 potato peeled and diced
  • 2 tbsp peas frozen
  • 1/2 small red onion finely chopped
  • 1 egg yolk
  • 150 ml olive oil
  • 1 clove garlic minced
  • 1/2 tsp lemon zest grated
  • 1 tbsp white wine vinegar
  • salt & pepper to taste

Instructions
 

  • Cook the diced veggies in a pan of boiling water for 10 minutes tossing in the frozen peas for the last 3 minutes. Do not cook the onion!
  • Rinse the cooked veggies under a cold tap and drain thoroughly.
  • Make the mayonnaise by beating the egg and drizzling in the oil very slowly. Finish off with the garlic and the vinegar and seasoning.
  • Toss the cold vegetables in the mayonnaise and serve on spoons.

Notes

You can change the veggies to whatever you have to hand for this recipe. Just make sure that you try to have everything cut all the same size.
