Refined sugar free spiced plum chia seed jam

This is a super quick and easy recipe for a healthy little pot of plum jam with a bit of spice too. Perfect on toast, stirred into porridge or yogurt or in your over night oats too.

Ingredients
 

  • 200 g plums about 4 plums
  • 1 cinnamon small stick
  • 1 star anise
  • 1/2 vanilla pod
  • 2 tsp maple syrup (optional)
  • 4 tbsp water
  • 2 tbsp chia seeds

Instructions
 

  • Chop the plums and cook with the spices and water in a small pan until tender - about 15 minutes
  • Remove the spices and blitz the plums with a hand blender
  • Add the maple syrup to the pan and cook for a further 5 minutes
  • Remove from heat and stir in the chia seeds and set aside for 30 minutes
  • Ladle jam into jar and pop on a lid

This spiced plum chia seed jam will keep in the fridge for up to 2 weeks
