Quick and easy savoury cheese scones

An easy recipe for cheese scones, serve with soup of with smoked salmon or even jam

Ingredients
 

  • 200 g plain flour
  • 1 tsp baking powder
  • 1 pinch salt
  • 1/4 tsp paprika
  • 45 g butter chilled and diced
  • 100 ml milk
  • 1 egg
  • 30 g cheddar cheese grated
  • 1/2 tsp mustard optional but adds great flavour

Instructions
 

  • Preheat oven to 200C/400F/Gas 6 and line a baking tray with parchment
  • Rub the flour, baking powder, salt, paprika and butter together to get breadcrumb texture
  • Mix egg and milk and add this in centre of the crumb mixture and stir in
  • Add the grated cheese and theme (and mustard if using) and bring together to form a soft dough
  • Flour your work surface and roll out dough till 1-1.5cm thick and using a cookie or upturned glass cut out rounds
  • Place on baking tray and sprinkle with remaining cheese
  • Bake for approximately 10 minutes till golden
  • Cool on a wire rack then split horizontally

Notes

These scones are best on day they are baked but you can warm them in the oven to revive them next day.
Scones freeze well for up to 3 months
