Quick And Easy Homemade Almond Croissants

These super easy almond croissants are golden and flaky and filled with fabulous frangipane almond cream, perfect with your favourite cuppa anytime

Ingredients
 

  • 50 g ground almonds
  • 1 egg
  • 50 g butter softened
  • 30 g sugar white
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 tbsp flaked almonds
  • 320 g puff pastry 1 pkt ready rolled puff pastry

Instructions
 

  • Preheat oven to 190C and line a baking tray

For the frangipane

  • Place all the ingredients (not the flaked almonds) in a food mini processor and give it a whizz so everything is smooth and well combined

Putting it together

  • Unroll the puff pastry and cut it into 3 rectangles then cut each in half diagonally so you end up with 6 long thin triangles
  • Spread each triangle with the frangipane paste and roll up from the wider end
  • Spread more frangipane paste on top of each croissant and sprinkle with the flaked almonds
  • Bake for 15-20 minutes till golden then allow to cool a little before serving
