Quick and easy gammon peach and orzo traybake with feta

Ingredients
 

  • 3 gammon gammon steaks cut into pieces
  • 1 red pepper chopped
  • 1 yellow pepper chopped
  • 1 onion sliced
  • 1 clove garlic minced
  • 3 peaches peeled, stoned and sliced
  • 1 tsp dried thyme
  • 300 g orzo pasta 75g per person
  • 600 ml water double quantity of water to the pasta
  • 1 pinch black pepper
  • 4 tbsp feta crumbled
  • 1 sprig thyme to serve

Instructions
 

  • preheat oven to 180C
  • Place all ingredients into a high sided roasting tin and bake for 20 minutes
  • Add the crumbled feta and bake for further 5 minutes
  • check the seasoning and sprinkle with fresh thyme to serve
