Sterilise a 500ml jar and start layering up all your ingredients.
Pour the olilve oil over the top and make sure you have enough to completely cover all the ingredients and tuck the bay leaf down the side of the jar, you want everything to look pretty.
Set aside in a cool cupboard for 1 week to marinate and for the flavours to properly infuse.

This marinated Feta will keep for up to 2 months in a cool cupboard. Once opened store in the fridge and use within 2 weeks.Serve as part of a sharing platter or with a Greek mezze. Use the oil on salads as well.
