Marinated Greek Feta Salad

This delicious marinated Greek feta salad in a jar is super tasty, easy to make and the perfect wee foodie gift at any time of year

Ingredients
 

  • 200 g feta
  • 1/2 red pepper finely sliced
  • 1/2 red onion finely sliced
  • 2 tbsp olives
  • 1/2 tsp dried oregano
  • 1 sprig thyme
  • 1 bay leaf
  • pinch sea salt
  • 1/4 tsp black peppercorns
  • 300 ml olive oil

Instructions
 

  • Sterilise a 500ml jar and start layering up all your ingredients.
  • Pour the olilve oil over the top and make sure you have enough to completely cover all the ingredients and tuck the bay leaf down the side of the jar, you want everything to look pretty.
  • Set aside in a cool cupboard for 1 week to marinate and for the flavours to properly infuse.

Notes

This marinated Feta will keep for up to 2 months in a cool cupboard. Once opened store in the fridge and use within 2 weeks.
Serve as part of a sharing platter or with a Greek mezze. Use the oil on salads as well.
