How to make homemade fresh pasta

Making fresh pasta is super easy and fun and only requires 2 ingredients!

Equipment

  • pasta making machine

Ingredients
 

  • 250 g 00 flour or plain flour
  • 2 eggs

Instructions
 

  • Pile the flour on a board and make a well in the centre and crack the eggs in there
  • Use a fork to break up the eggs and start moving the flour into the eggs
  • Use your hands to bring together the dough and then knead it for 10 minutes till silky smooth
  • Wrap pasta dough in cling film and pop in the fridge for 30 minutes
  • Roll by hand then pass through pasta machine till you have the thickness you want
  • Use the pasta right away or hang up to dry

How to cook fresh pasta

  • To cook the pasta boil a pan of water and add plenty of salt and add the pasta for about 2 minutes till the pasta is al dente (has a slight bite to it)

Notes

If you don't have a pasta machine you can roll the pasta dough by hand with a rolling pin. It takes a wee bit longer but you will still get a good homemade pasta.
Your pasta will keep for 2 days in the fridge or a month in the freezer.
Dried homemade pasta will keep for up to 6 months in an airtight container.
