spread the grated citrus zest on baking parchment over a drying rack and set aside in a warm place for a couple of days to dry out. (Aga, airing cupboard, above radiator, top of fridge)
Spoon into a jar with sugar and hsake well to combine thoroughly
Leave for a week to let the flavours combine and develop
