Gluten Free Brownies

Ingredients
 

  • 50 g dark chocolate over 70% cocoa solids
  • 25 g cacao nibs
  • 75 g coconut oil
  • 1/4 tsp stevia powder
  • 1 banana ripe
  • 2 eggs
  • 1 tsp vanilla extract
  • 50 g ground almonds
  • 25 g dessicated coconut
  • 1 tsp baking powder
  • 1 tbsp cacao powder or cocoa powder
  • 50 g walnuts chopped
  • 50 g almonds flaked

Instructions
 

  • Preheat oven to 180C/350F/Gas 4
  • Melt the chocolate in a bowl over a pan of bubbling water (don't let the water touch the bowl)
  • Warm the coconut oil to melt it and beat well with the stevia powder in a mixer.
  • Add all other ingredients (apart from the walnuts and almonds) and mix well.
  • stir in the nuts.
  • Spoon the mixture on to a 10" oblong baking tray lined with parchment.
  • Bake for 20 minutes or until just firm on the top, don't overcook as you want them to be chewy in the centre.
  • Remove from oven and cool on a wire rack.

Notes

refined sugar free, gluten free, vegetarian
If you don't have cocoa nibs just use more dark chocolate instead
