French Grated Carrot Salad

A French classic, salade de carottes rapees is super tasty and so easy to make

Ingredients
 

  • 400 g carrots peeled
  • 1 tbsp parsley finely chopped

The Dressing

  • 1 tsp lemon juice
  • 1 tbsp vegetable oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp Dijon mustard
  • 1/2 tsp honey

Instructions
 

  • Grate the carrots either on a box grater or the fine cutting disc on a food processor

The dressing

  • Mix all the dressing ingredients in a small jar and shake well

Bringing it together

  • Mix the grated carrots with chopped parsley and the salad dressing

Notes

This carrot salad will keep for 2-3 days in the fridge and you can make it the day before.
Grate the carrots don't just whizz them up in a food processor, you want little strips of carrot for this salad.
Serve this salad at room temperature either as a starter, a side salad, or part of an antipasti sharing platter.
