Grate the carrots either on a box grater or the fine cutting disc on a food processor
The dressing
Mix all the dressing ingredients in a small jar and shake well
Bringing it together
Mix the grated carrots with chopped parsley and the salad dressing

This carrot salad will keep for 2-3 days in the fridge and you can make it the day before.Grate the carrots don't just whizz them up in a food processor, you want little strips of carrot for this salad.Serve this salad at room temperature either as a starter, a side salad, or part of an antipasti sharing platter.
