Easy Chocolate Florentines

Quick and easy chocolate florentine biscuits packed with fruit and nuts are a real Christmas treat and a great gift idea too!

Ingredients
 

  • 25 g dried cranberries
  • 50 g candied peel
  • 75 g mixed nuts any nuts will do
  • 50 g brown sugar
  • 3 tbsp golden syrup
  • 50 g butter
  • 50 g plain flour
  • 200 g dark chocolate

Instructions
 

  • Preheat the oven to 180C and line 2 baking sheets
  • Roughly chop the nuts but don't crush them completely
  • put all ingredients (apart from the chocolate) in a pan and heat gently till sugar has dissolved. Stir to combine well and cook for 5 minutes.
  • Place teaspoonfuls of the mixture on to a lined baking tray spaced well apart as they will flatten and spread as they bake
  • Bake for 10-12 minutes or until golden (they will crisp up as they cool on the cooling rack)
  • Melt the chocolate either in a Bain Marie (bowl over simmering water) or in a microwave
  • Spread melted chocolate on cooled Florentines then make wave-like patterns on them with a fork
