Christmas Cake Chocolate Truffles

A great way to use up Christmas cake and other goodies to make these indulgent grownup treats

Ingredients
 

  • 300 g Christmas cake/fruitcake
  • 2 tbsp whisky
  • 50 g marzipan from top of cake
  • 100 g chocolate
  • 30 g mixed nuts crushed

Instructions
 

  • Remove marzipan from cake and roll into balls the size of a hazelnut. Discard icing.
  • Mash cake with whisky then set aside in fridge to firm up 1 hour
  • make balls of truffle and squish a marzipan ball into each one
  • melt chocolate either in bain marie (bowl over simmering water) or in microwave
  • dip the truffle balls in the melted chocolate and then roll in the crushed nuts
  • set aside in the fridge for at least half and hour to firm up

Notes

Store these Christmas cake chocolate truffles in a sealed box for up to a week or freeze for up to 3 months.
