Cauliflower Pizza Base

Equipment

  • food processor

Ingredients
 

  • 1 medium cauliflower
  • 40 g ground almonds
  • 40 g gram flour chickpea flour
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 3 eggs beaten
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 200C and line a baking sheet with baking paper
  • Cut off leaves from cauliflower and discard, save the stalk for soup making and chop the florets
  • Whizz florets in food processor to form rice like grains
  • tip into a bowl and mix in all other ingredients to form a loose dough
  • press this out to 1/2 cm thick on lined baking sheet with edge all round
  • bake for 35 minutes
  • add toppings of your choice and bake for a further 10 minutes

Notes

Use the toppings you would normally use when making a pizza at home.
This is low carn, gluten-free and has less calories than a standard pizza base
