Black Forest Brownies With Cherry Conserve

Ingredients
 

  • 115 g unsalted butter
  • 55 g cocoa powder
  • 85 g plain flour
  • 1/2 tsp baking powder
  • 2 eggs beaten
  • 175 g caster sugar
  • 1 tsp vanilla extract
  • 100 g cherry jam

Instructions
 

  • Preheat oven to 180C/350F/Gas 4
  • Line a 28 x 18cm/11 x 7" baking tin
  • Melt the butter in a pan then remove from heat
  • Stir in the cocoa powder till smooth and well blended
  • Add in eggs, sugar and vanilla extract
  • Now fold in the flour and baking powder
  • Stir in the cherry conserve/jam
  • Pour batter into lined baking tray and bake for 30 minutes till skewer inserted in centre comes out clean
  • Cut into pieces and cool on wire rack

Notes

These brownies will keep well in a sealed box for a few days and freeze for up to 3 months
