Baked grapes with labneh and pistachios

This easy reipe is perfect for a sweet yet savoury dessert and a great way to use up slightly aging grapes!

Ingredients
 

Labneh

  • 200 g Greek yogurt
  • 1/4 tsp salt
  • 2 tsp clear honey

Baked grapes with pistachios

  • 400 g seedless grapes
  • 2 tbsp maple syrup
  • 1 tsp balsamic vinegar
  • 3 tbsp pistachios crushed

Instructions
 

Make the labneh

  • Mix salt with yogurt and place it into a piece of cheesecloth/muslin and tie top and place in a sieve over a bowl and put something heavy on top to press it down and leave in fridge for 4 hours or overnight if you can
  • Unwrap the labneh from the cheesecloth and reserve the whey that is in the bowl for making scones or other goodies, just pop it in the freezer in a bag.
  • Stir the honey into the labneh to sweeten it for this recipe

Making the baked grapes with pistachios

  • preheat oven to 200C
  • Place the grapes on a baking tray and drizzle over the maple syrup and the balsamic vinegar and bake for approximately 10 minutes or until the grapes have colapsed and juices running free
  • Toast the pistachios in a dry pan for barely a minute till just coloured and aromatic

Serving

  • Serve the baked grapes in small bowls with a spoonful of labneh and sprinkled with the pistachios
