Sieve the flour, salt, cinnamon, baking powder and sugar into a bowl
Whisk together the milk, melted butter and egg in a jug
Pour the liquid into the dry ingredients and mix well till you have a smooth batter
Core the apple and slice into rings about 2mm/1/8th " thick
Heat the remaining butter in a non-stick frying pan and when it's frothing spoon in the pancake batter, about 2 tablespoons per pancake and lightly press a slice of apple into each
once the pancakes have bubbles popping on the top check to see if they are golden underneath. If so then flip them over and cook for another 1-2 minutes till golden on the other side

I served 2 pancakes per person so my recipe for apple pancakes served 3 people.Serve your apple pancakes with a dollop of cream, some fresh berries and maple syrup or maybe with vanilla ice cream on side - apple pancakes a la mode!You can prepare your batter ahead of time and keep it in the fridge and just give it a stir before making the pancakes.If you don't use all the apple pancakes at once, wrap any remaining pancakes in foil and reheat gently in the foil to keep the apple from drying out.Not a fan of cinnamon? Then use ginger, vanilla or any spice you like. American apple pie spice mix is perfect for this recipe.
