Coconut And Almond Snowballs With Rum

Super tasty and so quick and easy to make, these little snowballs make the perfect wee foodie gift for Christmas

Ingredients
 

  • 125 g ground almonds
  • 125 g icing sugar
  • 30 g unsalted butter
  • 2 tbsp rum I used white rum

Snow covering

  • 1 tbsp granulated sugar
  • 2 tbsp desiccated coconut

Instructions
 

  • Whizz together all ingredients in mini processor to form a paste
  • With wet hands pull off pieces about the size of a marble
  • Roll the balls in the coconut and sugar mixture
  • Set aside in the fridge for 30 minutes to firm up

These coconut almond snowballs will keep for up to a week.
