Baked cod with gremolata sauce

A simple, elegant, tasty and healthy fish dish and so easy to make, perfect for any night of the week.

  • 100 g cod fillet
  • 1 tomato
  • 1 clove garlic minced
  • 1/2 lemon zest and juice
  • 1 tbsp parsley chopped
  • 1 tbsp basil chopped
  • 2 tbsp olive oil
  • Salt and pepper


  • Preheat oven to 180C
  • Make the gremolata first by whizzing garlic, lemon zest and juice, fresh herbs and olive oil
  • Set aside in fridge for 30 minutes to allow flavours to develop
  • Place fish in baking tray and cover with gremolata sauce
  • Quarter the tomato and arrange around the dish
  • Season with salt and pepper
  • Bake uncovered for 20 mins
  • Serve with a green salad


Serve this with a simple salad on the side or add a baked potato or chips if you fancy.
