All-Nut Apple Bake

  • 2 large eating apples make sure they are firm
  • 2 tablespoons All-Nut Butter
  • 2 tablespoons sultanas or mixed dried fruit
  • 2 tablespoons brandy or orange juice
  • Grated zest of 1 orange
  • 2 tablespoons double/heavy cream
  • 2 teasp[oons brown sugar
  • Yogurt or cream to serve


  • Preheat the oven to 180C/350F/Gas 4
  • Wash and dry the apples and remove core
  • Make a slit in the skin all the way around the apple about half way down (like the equator line on a globe) this stops the apple splitting in the oven
  • Soak the sultanas in the booze or orange juice and warm in a small pan to speed things up and help them absorb as much liquid as possible
  • Add the orange zest to the fruit
  • Place half a tablespoon of All-Nut butter inside each apple followed by the same amount of the soaked fruit, repeat the process to fill both apples
  • Stuff it down with a spoon handle to get it all inside
  • Place the apples on a large sheet of baking foil inside a small baking tray
  • Pour on the cream and scatter the sugar on top
  • Pull up the sides of the foil to form a tent covering the apples and leaving a bit of space above and around them
  • Pinch the foil into place so you are making a sealed bag. You want the apples to steam within the bag to keep them really juicy.
  • Bake for 30 minutes
  • Remove from oven and carefully open the foil package
  • Serve each apple with either a dollop of yogurt if you are feeling healthy or just add more cream
