Herb Garden Vodka

  • 750 ml/1 pint bottle vodka
  • handfull each of sage fennel and thyme
  • rind of 1 lemon


  • Scrub and dry lemon if it has preservative wax on it and peel off the rind.
  • Bruise the herbs by bashing about a bit and stuff into a wide mouthed jar.
  • Add the lemon rind and top with vodka.
  • Pop on a lid and shake well.
  • Set aside for 2 weeks shaking every day.
  • Strain through a paper towel or muslin lined sieve and pour into sterilised bottles.
  • Serve ice cold (you can keep it in the freezer if you like) in shots or top with tonic or soda with ice and a slice!
