Pork And broccoli Stir fry For Chinese New Year

Ingredients

  • 1 large pork steak
  • 1 tbsp coconut oil
  • 1 cup of broccoli florettes
  • 1 cup of sugar snap peas
  • 1/2 cup of chopped kale
  • 2 baby leeks cleaned and chopped
  • 1 tbsp chopped fresh parsley
  • 1 tsp sesame seeds
  • Marinade;
  • Juice and zest of 1 mandarin
  • 1 tbsp soy sauce
  • 1/2 tsp chopped fresh chilli
  • 1/2 tsp minced fresh ginger
  • 1 clove garlic minced

Instructions

  • Remove any fat from pork and flatten a little with rolling pin the slice into strips
  • Make the marinade by mixing all of those ingredients in a jam jar and shaking well
  • Pour marinade over pork strips, cover and set aside in fridge for 1 hour
  • Heat coconut oil in a wok till hot and stir fry the pork for 2 minutes
  • Add all veggies and marinade and cook for a further 2-3 minutes
  • Serve sprinkled with sesame seeds
