Potato Scones

Potato scones are a traditional Scottish recipe and make the perfect addition to any hearty cooked breakfast

  • 225 g/8 oz cooked potato
  • 1/2 tsp salt
  • 25 g/1 oz butter
  • 50 g/2 oz plain flour


  • Mash the potatoes with butter and salt
  • Add the flour till it forms a dough
  • Roll out on floured surface to 5mm thick and use a 22cm plate to cut out 2 circles then cut into quarters
  • Heat a heavy based pan and eith add a tiny bit of oil or flour and bake on both sides till golden brown
  • serve hot
