Oat Crusted Salmon

Super healthy recipe for oat crusted salmon, the perfect light supper dish

  • 4 salmon fillets
  • 50 g porridge oats
  • 2 tbsp chopped fresh dill
  • grated zest 1 lemon
  • 35 g flaked almonds crumbled
  • 1 egg beaten
  • 1 tbsp olive oil
  • Salt and pepper to taste


  • Preheat oven to 200C/Gas 6 line a baking tray with baking parchment
  • Place the slamon fillets skin side down on the lined baking tray
  • Mix the oats with lemon zest, dill, almonds and seasoning with the egg
  • Brush the salmon fillets with olive oil then press on the crumble topping
  • Bake for 20 minutes
  • Serve with a salad on the side
