TOMATO SOUP

Ingredients

  • 2 large beefsteak tomatoes
  • 1/2 tsp dried oregano
  • 1/2 small onion diced
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 1/4 tsp Dijon mustard
  • salt and pepper to taste
  • Top with Greek yogurt olive oil and chilli flakes

Instructions

  • Quarter the tomatoes and grill for 10-15 minutes with some salt and pepper and dried oregano and olive oil
  • Saute the onion for 3 minutes then add garlic for 1 minute
  • Add the tomatoes and all other ingredients and cover with water
  • Simmer for 20 minutes
  • Blitz with hand blender
  • Season to taste if required
