I had a lovely friend round for supper the other night and wanted to do something a wee bit special. Stuffing any dish whether it is a chicken or a piece of meat always makes it a little more special and less of an everyday sort of dish. I used a fillet of pork tenderloin here and it was just perfect with the mushroom stuffing. I made it just a wee bit posh by using a tiny bit of truffle to jazz up those mushrooms.
You will need (will serve 3 dependant on size of fillet)
1 small onion
tiny piece of truffle (told you this was posh!)
Glug of white wine
Juice of half a lemon
2 tbsp butter/herb butter
1 clove garlic
3 big sage leaves
Handful of fresh parsley
Salt and black pepper to taste
Chop sage and parsley, also add your plain or herb butter at this point.
This being Ayrshire I couldn’t get the fancy mixed mushrooms that I wanted. So I used 5 fresh chestnut mushrooms and half a jar of mixed mushrooms in oil.
Roughly chop all your mushrooms whatever you have.
Toss all your mushrooms, oinions, garlic, sage, parsley and butter into a large bowl and mix well.
Now time to add that little bit of poshness. Now you don’t need this, it is just an extra little extravagance that gives this dish a bit of extra dash. Use only about 50mm of truffle sliced and then well chopped into tiny pieces.
Add to your bowl of goodies and mix thoroughly.
Slice into the meat but not all the way through.
Tip your mushroom meddly over the pork and season with salt and black pepper. Now pour on a glug of white wine. You can add about a tablespoon of olive oil now as well if you have been lucky enough to use all fresh mushrooms. Because mine were in oil I didn’t need to add oil now.
Pull up the sides of the foil and seal up your parcel. Place on a baking tray and pop piggy in the oven.
Go for a medium hot oven and cook for about 40 minutes until the meat is completely tender.
Be careful when opening the foil as there will be some serious heat in there.
I served my pork tenderloin stuffed with mushrooms and herbs alongside a simple green salad with herb dressing (recipe to follow).
Serve for family or friends and make it special.
