I feel like I am chasing my tail this week trying to catch up on everything that got put aside for the Christmas holidays. What has happened to that ‘be organised and get things done’ vibe I was dancing with in my mind over the new year, ah yes, it evaporated with the cold light of day and the chill in the air.
I’m glad to be back to healthier eating again, in fact by new year I was really looking forward to normality. Guess I just can’t stand the pace as I used to. This recipe for Figs with feta mint and walnuts is just what I’m looking for now as a treat instead of heavy puddings and seriously sweet desserts that are the norm over Christmas.
I think you can tell I am pining for warmer weather with these mediterranean inspired recipes this week. This one is almost more of a construction job than a proper recipe, but then again, what is any recipe if not a case of bringing things together and building them up into something tasty?
You can’t go wrong with good ingredients, and this little recipe boasts some of my favourites; luxuriously juicy figs, salty feta cheese, crunchy walnuts and pumpkin seeds, fresh tongue tingling mint and the sweetest of honey – honestly, what more could you want. Well if you did want to make it extra special you could add just a spoonful of really good plain Greek yogurt.
I’ll have this for lunch while snuggled by the stove with a pile of notebooks to hand trying to work out what it was I was planning to get done this year. Where are all those post-its I had written out to stuff into my diary? Where are the pages I had written ready to type? Never mind, it’ll all come back to mind, maybe when the weather gets just a wee bit warmer….
In the meantime I can enjoy nibbling on honey doused figs warm from the aga and let my imagination take me to lands of sunshine.
- 2 ripe figs
- 1 tbsp feta cheese
- 10 walnut halves
- 1 tsp pumpkin seeds
- 1 tbsp runny honey
- 1 tsp shredded fresh mint leaves
- Preheat oven to 180C/350F/Gas 4
- Slice the figs into quarters but leave attached at base.
- Crumble the feta into the figs and add the walnuts, and pumpkin seeds.
- Drizzle over the honey
- Sprinkle on the mint leaves
- Bake in oven for 10-12 minutes
- Serve alone or with a spoonful of plain Greek yogurt.
