Well I have to say this has been a fun exercise. I've loved reading all your comments on just what I was up to in these lemony photos.
I can't beleive it tho, nobody got it right. I think the thing that threw everyone was lack of sugar. However Jane did say this

So what was it?
I'd seen 'add pectin' in so many recipes, I'd seen the stuff in the supermarket. I did 't know you could make your own. And I certainly didn't know it was just whizzed up lemon scraps. So now I know, now I've made it and know it works. And yes, I now chuck my lemon peels in the freezer for future use. Maybe not the most useful skill in the world, but you never know!
In jam making you must add pectin (a naturally occuring soluble fibre)to fruits etc that are low in it to help the jam/jelly set properly. Things like crab apples, apples, gooseberries and redcurrants etc are all high in pectin.
Normally you just buy this stuff in bottles in the supermarket. however you can also make your own from lemon skins. Just do as I did in the photos.
Squeeze the meons and keep the juice.
blitz lemons in processor (kitchen will smell fab at this point)
Boil up the chopped skins in water.
Drip them through muslin overnight.
The resulting liquid is "Pectin".
You just add this to jam and jelly recipes (like grape and wine jellies, apricot jam, cherry jam etc) where it mentions it in recipes.
It is a good way to use up lemon skins. Whenever you use any lemons, just throw the skins into a bag in the freezer. Then next time you are feeling the urge to make any preserve that needs pectin you are all ready to make your own in a whizz of the processor.
Now on to something else today. The other day i was clicking on all the blog links at the side of my blog to check if they still worked and actually linked to another blog. wow was I disapointed to find that so many had just disapeared. One or two seemed to be frozen in time with no posts for months.
Someone emailed yesterday and asked if anyone had heard if Bertie Meadows blog was still about, I don't know.
