The weather man says we are in for more cold weather. However, l don’t need any excuses to make comfort food. Yesterday l gathered my ingredients to make my
CARROT AND THYME SOUP
2 tins of tomatoes
bunch of thyme
handfull of lentils
squeeze of orange
Sweat the onion in a little olive oil. Throw in everything else and add some water. Cover and simmer for half an hour. Now dive in with your magic wand food mixer thingy ~(technical term!) or bash about with a potato masher – certain satisfaction derived from this method.
Serve with a swirl of plain yogurt and a chunk of crusty bread.
